October 30th Grosvenor Casinos has announced that its customers will soon be enjoying Quality Standard Mark (QSM) beef and lamb sourced from England, following the company’s pledge to use this endorsement in its restaurants. The announcement came as Grosvenor Casinos’ chefs from across the UK gathered for the final of its Chef of the Year Competition which saw each competitor creating two main course dishes, some of which will be introduced to the restaurant menu in the New Year.
Kevin Boyle, Head of Food and Beverage Development at Grosvenor Casinos, commented: “Endorsing our menu with the Quality Standard Mark offers reassurance of provenance to our customers and reflects the increasing consumer demand for knowing where their food comes from.”
The Grosvenor Casino Chef of the Year competition, which was hosted by Birmingham College of Food, saw six finalists working against the clock to prepare their dishes which were then judged by Kevin, representatives from the college and the supplier sponsors. The winning dishes of Persian spiced corn fed chicken with chilli potato wedges and roast rump of English lamb with harissa, moutabel and foul moukala were created by Leigh Stark who heads up the kitchen at Grosvenor’s Park Tower Casino in London. Praised for the vibrancy and fantastic flavour combinations in his dish, Leigh was presented with a competition trophy by Michelin Star chef, Adam Bennett, Leigh’s prize also included a 2 day culinary trip to San Sebastian, Spain.
Kevin Boyle continues: “We have some incredibly talented chefs working in our casinos throughout the UK and it’s great to be able to give them the recognition they deserve through our Chef of the Year competition. All of the dishes created were excellent and we are really excited to add some of these to our menus next year.”
Earlier this year, Grosvenor Casinos unveiled a new menu focused on upscale casual dining which features a dish created by last year’s Chef of the Year competition winner, Tom Kettless. Once again, some of the dishes presented in this year’s final will make their way onto the menu for 2016.
Kevin Boyle concludes: “The casino market is diverse, multi-occasion and open 24/7. We have purposely set out to offer a casual, yet sophisticated, approach to our menus to enable us to cater for the varying needs and tastes of our customers. We always strive to use the best quality, home grown ingredients in our dishes wherever possible and are looking forward to being able to feature the Quality Standard Meat (QSM) logo on our menus.”
Grosvenor Casinos’ restaurants sell over one million plates of food per year across the business, including 5,000 rump steaks per month. The chain’s food sales are currently at an all-time high, experiencing around 5% growth year-on-year.
